On y met en sc\u00e8ne, une seule journ\u00e9e dans l&rsquo;ann\u00e9e, l&rsquo;op\u00e9ration de vinification telle que cela se faisait il y a 2000 ans. Plusieurs adultes et enfants s&rsquo;occupent de fouler le raisin (pieds nus, bien entendu). Ensuite le raisin foul\u00e9 est transf\u00e9r\u00e9 dans une grande caisse en bois et on proc\u00e8de \u00e0 l&rsquo;op\u00e9ration de pressage en utilisant une grande poutre de ch\u00eane mont\u00e9e sur un syst\u00e8me de poulies<br \/>\net de leviers. C&rsquo;est un spectacle unique offert au public du jour, agr\u00e9ment\u00e9 par des explications claires et d\u00e9taill\u00e9es pendant l&rsquo;op\u00e9ration.<\/p>\n<p>Ensuite, dans le grand jardin int\u00e9rieur du mas, on pouvait d\u00e9guster les vins (modernes) de l&rsquo;\u00e9tablissement, de m\u00eame que plusieurs vins aromatis\u00e9s reconstitu\u00e9s \u00e0 partir des recettes utilis\u00e9es \u00e0 l&rsquo;\u00e9poque romaine.
